Organic Garlic Scapes

Scapes. Staple of spring and early summer. They're the delicious sacrificial lamb, without which we'd not have garlic. They're removed so the plant can focus all its energy on growing the bulb. The wonderful thing is that scapes are super versatile. Scape pesto is a classic. They're also wonderful in stir frying and soups. A mellow garlic flavor with a touch of sweetness.
