Structure 2026

Structure 2026 is a smoked-malt base beer made with juniper. The ale was brewed with 100% Mountain Ash Smoked malt and wholly fermented by a diversity of yeasts and bacteria collected from native flowers from NSW. It was aged for one year in an ex-wine French oak puncheon. It was then macerated with juniper berries from Poor Toms across the street, bottled with raw, unheated Blue Mountains Polyflora wild honey from naturally formed, bee-friendly Warré hives from Tim and Emma Malfroy and allowed to naturally condition and carbonate before release.
