To celebrate, we wanted to offer you something unusual and high quality, everything this gesha is. The producer : Wilder Lazo is a colombian producer, who used to be a veterinarian before coming back to his roots, as he grew up in his father's coffee farm. With his knowledge in genetics, he focused on growing high quality varieties and then ensure the processing is done precisely to reveal its full flavor potential. He is now reknown in the industry for his expertise in anaerobic fermentations and for producing incredibly high quality coffee. Most of them are competition grade. The process : After meticulously harvesting cherries (95% ripe, 5% semi-ripe), the drying goes into 2 steps. First, the drying process involves individual cherry drying (grain-by-grain) in the greenhouse (marquesina) for the first 5 days to accelerate initial dehydration at a maximum temperature of 35°C. Then, the drying phase is completed slowly over 20 days at a maximum temperature of 28 °C to preserve the genetic profile and aromatic complexity of the gesha variety. The cup : You'll experience a fruity and sweet cup with dominant notes of blakcurrant liqueur, subtly floral with hints of lilac and a delicate yuzu-like acidity. Recommended method : pour-over, as V60 or Chemex, with a ratio of 1:16.
