These coffees are a limited release from the El Vergel Estate, grown by second-generation producers Elias and Shady Barter using a new mosto processing method.
- The cherries undergo an extensive 72-hour anaerobic fermentation process.
- The process uses liquid byproducts that are rich in microbrials.
- The coffee is described to have flavors of cocoa nibs, strawberries & cream, and fuji apple.
