Ethiopia Hadeso (Legacy Wholesale)

"Sweetness, can you believe this?" From sample roast to now, our team has really enjoyed this coffee, across all its evolution. Originally, after sample roasting, we tasted Sweet Florals, Honeydew, and Whipped Cream, but the notes were a bit muddled, or lacking flavor clarity. In order to have a bit more distinction between flavor notes but keep the overall development the same, we chose to shorten the total roast time by charging (starting temp of roast) at a higher temperature - this successfully gave us a bit more clarity while also giving the overall sweetness of the coffee a bit more depth. In it's current iteration, we are pleased to be tasting Wildflower Honey, Nectarine, and Whipped Cream. The delicate florals we had tasted in the sample roast deepened into a richer sweetness evocative of honey, the bright honeydew note sharpened to give us a bit more acidity - the Whipped Cream note is definitely still present, but now feels like a bit less of an outlier and more of a complimentary note. In our brews, we found that a 1:15 ratio on a flat bottomed brewer most accurately represented our tasting notes.
