A saignée rosé made exclusively from Pinot Noir, from Les Paquis in Villers-Allerand, in a vintage where the ripeness and depth of the fruit give full meaning to this winemaking choice. Because there is something almost radical about this Logos. The saignée does not seek the delicacy of a pale rosé, nor the simple gourmandise of the fruit. It seeks the skin, the substance, the vinousness of Pinot Noir and naturally brings Champagne closer to red wine - a boundary that Stroebel has continuously explored through his Coteaux Champenois. After more than ten years, it is precisely this substance that makes the bottle so exciting. The dark fruit and spices deepen, the texture develops a patina, the bitterness settles in and gives the wine an almost sanguine dimension. A Champagne rosé that speaks as much of Pinot Noir as it does of effervescence, dense, vinous, with an energy that prevents power from taking over. Logos Rosé 2015 is an absolute rarity, but above all, one of the most fascinating expressions of Stroebel's vision: somewhere between Champagne, great saignée rosé, and red wine from Villers-Allerand.
