Flocked and Loaded Wild Fowl Rub

Poultry seasoning was built for birds raised in a barn. Yours flew eight hundred miles to get here. That bird needs Flocked and Loaded. Orange peel, brown sugar and paprika stand up to dark, iron-rich waterfowl instead of burying it, and anything built for a wild goose has no trouble with a chicken. There is real sugar in the blend, so on a hot grill season late rather than early and let it build color instead of scorching. Smoke it, grill it, or sear it hot.
