What’s in the box (500 g / 1.1 lb each) Tagliatelle – Tumminia — the Sicilian heirloom durum, nutty and dark. Flat ribbons for butter, oil, or a slow ragù. Busiate – Tumminia — the same grain in the traditional corkscrew, shaped to hold the last drop of sauce. Rigatoni – Perciasacchi (Khorasan) — 100% Sicilian-grown Khorasan wheat. Ridged tubes for baked dishes and chunky sauces. Spaghetti – Durum — heirloom durum, the everyday shape for tomato sauce and olive oil. What they share Organic. Stone-ground whole grain with bran and germ kept in. Bronze-die cut, slow-dried at low temperature. Non-enriched — no folic acid, nothing stripped out and sprayed back on. Semolina and spring water, no eggs. Made in Sicily. How we cook it Salted water, rolling boil, a minute under the package time, then finish in the sauce with a splash of the cooking water. No. Ancient grains are wheat; their gluten is in its original form, not a modern hybrid. What’s the difference between the grains? Tumminia is a dark, nutty Sicilian durum; Perciasacchi is Sicilian Khorasan, milder and golden; durum is the classic pasta wheat.
