Nicaragua - Apple - Pacamara
Where the natural gets dried whole and goes deep into papaya and blackberry, this one gets depulped and fermented clean, then washed down the channel before drying. What's left is the fruit that was in the seed all along, and in this lot that fruit is apple. Gold Mountain's own cupping notes just say APPLE in capital letters, which is about right. Crisp apple up front, ripe yellow peach behind it, and a honey sweetness that coats everything and lingers.
