For our third Dream Dram release, we’re opening up a distinctive piece of Irish whiskey history: Polaris 4.3, built around Vintage Mash Bill No. 9, a historic recipe researched by whiskey historian Dr Fionnán O’Connor and brought to life at Boann Distillery. Five grains combine to create a rich, textural Irish whiskey with a character all its own: 40% unmalted barley 30% malted barley 15% oats 10% wheat 5% rye Fully matured in an Oloroso Sherry hogshead, this expression brings together the richness of sherry-soaked fruit, the creamy oils of oats, the sweetness of wheaten caramel and the distinctive herbal spice of Irish pot still whiskey. On the nose, vibrant orange peel and nostalgic citrus cordial meet layers of Twix and Rolo caramel, ginger biscuit, cinnamon, clove oil and golden syrup. The palate builds into waves of figgy sherry, bread-and-butter pudding, sticky toffee and muscovado sugar, with a wonderfully textured interplay of grains and spice. The finish is unmistakably indulgent: Fig Rolls, vanilla pound cake, cinnamon-dusted French toast and toasted oak, all wrapped in lingering Oloroso richness. Beneath the citrus lies an alluring current of Twix and Rolo caramel, with a little fresh bread and the richness of sherried wheat. Wet bark, cinnamon stick and clove oil bring warmth from the wood, followed by ginger biscuit, generous custard, golden syrup and old sultanas. Pithy pot still grasses weave through the sweetness, creating a sunbaked, warmly citrine character that deepens with every hint of baker’s spice. Palate Unmalted barley oils, big oaten creams and wheaten caramels roll across the palate beneath deep, buoyant waves of figgy sherry. Rich, textured and beautifully layered, this is Irish pot still whiskey with both treble and bass: bread-and-butter pudding, sticky toffee, spent barley and old leather, framed by herbal spice and allspice. Muscovado sugar adds another layer of dark sweetness, while the unusual grain combination brings body, complexity and an unmistakable character. Finish A finish that genuinely evokes a freshly opened packet of Fig Rolls: soft, crumbly biscuit, rich figgy fruit and all. Toasted oak gives way to vanilla pound cake and cinnamon-dusted French toast, with herbal oils lingering beneath the sweetness. Autumnal and warming, the final impression is of cinnamon-spiced Boann character and a cornucopia of grain — oats, wheat, unmalted barley, malt and rye — all brought together in a generous dousing of Oloroso richness.
