The Optimiszt is their most playful cuvée, and intentionally so. 100% Pinot Noir fermented in a 1,000-litre old oak barrel, bottled as a pét-nat to capture the natural bubbles, then disgorged without additions of any kind. No fining, no filtration, only the naturally occurring sulphites from fermentation itself. The piggy on the label says it all.
