WE SUMMONED THIS ONE EARLY We prebooked Watermelon Specter in February, before the coffee was even grown. It landed fresh in Milwaukee this August, just in time for us to start thinking about Halloween candy. At the farm, five days of co-fermentation with watermelon and yeast give the coffee its juicy, candy-like character before it moves through a honey process. We’re roasting it light to preserve the delicate aromatics from fermentation and let the fruit-forward character stay in focus. The result is bright, sweet, and nostalgic, with the unmistakable flavor of watermelon candy, the kind you hope to find in your Halloween haul.
