Rishiri Konbu yields a very clear dashi, making it very popular with chefs in the Kansai region, famous for their Kaiseki cuisine. This quality of Aimono is naturally grown (wild), and its leaves are very thick, indicating fantastic quality. Furthermore, this konbu is not merely dried but refined and aged through an elaborate process to highlight its best flavor and umami. Aimono Konbu is an algae specialist located on the "Konbu Road" in Toyama Prefecture, a route through which konbu and other seaweeds historically reached the imperial capital of Kyoto. To this day, Aimono products are used in top restaurants there, and Aimono also supplies the world-renowned restaurant Noma, to name just one more satisfied customer.
