Naturally Sparkling Medium Fine Cider view tech sheet Hailing from a single orchard at Woodrow Barton farm along the River Exe, this cider is meticulously crafted from the fruit of one ancient Browns apple tree and four Kingston Black trees. Because these varieties ripen simultaneously, Polly and Mat harvest and press them together and allow a wild fermentation to ensue to maximise the depth & complexity. The natural cold winter weather is used to help slow the fermentation. By racking on the coldest days and bottling at exactly the right moment, they capture a delicate carbonation while preserving the cider's natural residual sweetness. The combination of perfectly ripe Browns apple and Kingston Black creates tart but sweet rhubarb and ripe blackberry character layered with delicate hints of ginger and spicy clove. This cider is an exceptional match for spicy cuisine, such as Mexican or Thai dishes.
