This premium cold water fish has a firm and meaty texture which works well with bold flavours and can be baked, poached, roasted or pan fried. Bake in the oven with a rich parmesan and parsley butter. Poach in a Mediterranean lemon and wine broth with capers, onions, garlic and fresh herbs for a delightfully light dish. Fancy something richer? Poach in a red wine sauce wild mushrooms and bacon or baste in a brown butter sauce and serve with a celeriac mash or puree. The choices are endless.
