Description A true Pet Nat made from the first fruit of our new planting at Birling Estate. Fresh and full of character. Winemaking Whole bunches, gently pressed. Partially fermented in stainless steel with indigenous yeast and bottled before fermentation completed to capture natural sparkle. Roughly hand disgorged. No SO₂ additions. Tasting Notes Nose: Raspberry, apple crumble. Palate: Red apple, raspberry and sweet redcurrant.
