Prep the flowers: Clean and chop the banana flowers, soaking them in diluted buttermilk with a pinch of salt to remove bitterness and prevent discoloration. Roast the spices: Dry roast 100 g of chana dal (split chickpeas), 50 g of urad dal, dried red chillies, black pepper, and curry leaves until aromatic. Dry and blend: Drain and thoroughly dry the banana flower petals. Sauté them in a little oil until completely crisp, then blend them together with the roasted spices and salt into a coarse powder.
