Gluten-Free Baking Course 24th September 26 with Naomi Devlin
We mill a wide range of Gluten-Free flours originating from many different cultures and geographic regions, demonstrating fascinating flavours such as sorghum, teff and quinoa. Our comprehensive baking workshop will explain the different options that can be used as alternatives to gluten-containing flours, without compromising on flavours. Whether you follow a gluten-free diet or want to bake for someone who does, this masterclass will teach you how to use techniques unique to gluten-free baking and simple, easy-to-find ingredients. Our philosophy is to keep the recipe as natural, tasty and nutritious as possible by blending a wide range of gluten-free flours, and to celebrate the different flavours and textures creatively! The workshop will be led by Naomi Devlin. A coeliac diagnosis came so long ago that Naomi no longer tries to replace wheat but ponders the opportunities of inherently gluten free grains. She has taught free-from cookery for the last fifteen years at schools around the UK and Europe, notably River Cottage, Riverford Farm and Ashburton Cookery School. Author of three gluten free cookbooks, she has honed her recipes through teaching them. In her classes the focus is on understanding why things work or fail, which flours combine well and how to maintain structure in gluten free bakes. In person classes allow students to learn the hand eye coordination needed to roll dough or form dumplings and the skills needed to assess baking times. Menu: Pierogi, Fougasse, and Doughnuts. As a result, any course attendees who are coeliac will learn skills and be given recipes to bake at home, but sadly won’t be able to eat the fruit of their labours on the day.
