In the Beirut subregion, where the cold nights are crisp and the days temperate, we find the farm of Edwar Fernandez situated within the Alto Mayo Protected Forest. His farm, El Refugio del Mono, Spanish for The Monkey's Refuge, gets its name from the many monkeys that seek shelter there. On this land, wildlife peacefully coexists with Edwar's family and coffee cultivation, creating a landscape that produces some of Peru's most stellar coffees. Growing coffee in such a delicate forest ecosystem requires a commitment to sustainable practices and dedicated specialty market access to thrive. Edwar embraces this responsibility by maintaining healthy soil through Bokashi-style fertilizer prepared with food waste, coffee pulp, sugarcane stalks, microorganisms from fertile soils, and island guano. This careful stewardship of the land ensures that both the forest and the coffee plants can flourish together. This same attention to detail extends to the processing: after de-pulping, the cherries are immediately transferred into wooden basins for fermentation. Once complete, the parchment is washed with clean water and placed onto raised beds under roofed, transparent structures for drying. The meticulous effort invested in these steps is evident in the final cup, which offers quality that we look forward to each year.
