All three come from the same place: the protected natural reserves of O Courel and Ancares in Galicia, northwestern Spain, where Toca's apiaries sit above 600 meters altitude in uninhabited terrain shared with brown bears, amid forests of oak, chestnut, heather, and bramble. The bees here are fed only their own honey. The hives receive no chemical treatments. Eucalyptus Honey Eucalyptus trees arrived on the coastlines of Galicia from Australasia in the late 1800s and have become deeply woven into the region's Atlantic landscape. Toca's coastal apiaries — where bees also collect from chestnut and heather — produce this eucalyptus honey from those Galician coastal blooms exclusively, a variety found nowhere else. It is the mildest and most approachable of the three: a soft, gentle honey with a distinctly intense aromatic presence that contrasts with its delicate flavor. Amber in color and crystallizing to warm golden tones, it carries a floral aroma with a characteristic waxy note — the signature quality of eucalyptus blossom honey — and a taste that is sweet and lightly acidic without heaviness. Eucalyptus honey has long been associated with balsamic properties traditionally used to support respiratory health. Bees collect resins from the buds of conifer trees — here, from the eastern Galician mountains that shelter the Ancares and Courel reserves — mix them with pollen and their own active enzymes, and use the resulting compound to seal and sterilize every surface of the hive against bacteria, fungi, and viruses. It is literally the hive's immune system in material form. Toca blends 2% of this mountain propolis into their organic wildflower mountain honey, creating a dark amber honey with an intense, complex flavor and a characteristic lingering warmth in the throat that propolis alone produces — immediately distinctive from the first spoonful. The propolis here is sourced from the same mountain environment as the honey, giving the blend a coherent character rather than an additive feel. It is traditionally taken a tablespoon at a time to support immune defenses, particularly during cold and flu season, and pairs especially well with warm drinks and herbal teas. Because the bees draw from multiple nectar sources across the mountain landscape, this honey reflects the full botanical richness of Galicia's high-altitude forests rather than a single blossom type. The result is complex, mineral-rich, and powerfully aromatic — amber to dark amber in color, prone to crystallization as raw honey should be, with a flavor that is very pronounced and defined by a slightly acidic brightness with deep floral and vegetal undertones.
