Black Summer Truffle (Tuber Aestivum Vitt.)

Widely used, Summer Truffles (Tuber Aestivum Vitt.) are by now among the most known and appreciated around the world also thanks to their easy availability and affordable price. The Summer truffle is found in abundance throughout Europe, most commonly in Italy and France. Also known as “Scorzone” in Italy, it is black in colour and it has an almost alligator skin texture, formed of protruding warts, rough and pointed at the ends. It presents lighter gleba than the other varieties of black truffles; in fact, it has a nut flash with yellowish tones, crossed by branches of white veins. The summer black truffle has a rather high average size, and normally it reaches a size of up to 10 cm (3.9 in). However, they are most commonly found around the size of golf balls with an average weight between 50gr and 200gr.
