The first tipple to come from Edinburgh's Port of Leith Distillery has arrived in the shape of Lind & Lime Gin! Spirit Gin Style Gin, London Dry, Zesty, Pink Peppercorn Where's it from? Leith, Scotland Volume 70cl ABV 44% Pairing/Garnish Good tonic and a lime wedge The name is inspired by Dr. James Lind of Edinburgh, who conducted one of the first clinical trials aboard the HMS Salisbury in the 18th century. During these groundbreaking trials, he observed that scurvy patients consuming citrus fruits showed remarkable recovery—a discovery that would transform maritime health. Hence the addition of lime within this gin, a nod to that pivotal moment in medical history. To balance the powerful citrus freshness, the distillers also used pink peppercorn alongside five other carefully selected botanicals (including juniper) to create a harmonious, layered recipe. The result is a London Dry gin that captures zesty brightness while maintaining the botanical complexity that defines the category. Each serve reveals the interplay between the vibrant lime character and the subtle spice of pink peppercorn, making it equally compelling served neat, over ice, or paired with quality tonic and a fresh lime wedge.
