Ethiopia: Yirgacheffe Chelbessa

Ethiopia: Yirgacheffe Chelbessa is a beautifully delicate washed coffee with crisp Asian pear, honeyed sweetness, and an elegant, floral Moscato finish. This coffee comes to us through our friends Joel Edwards and the team at Red Fox Coffee Merchants, sourced through the historic Ethiopian export house Moplaco. Producer Neguesse Debela established his first washing station in Worka Chelbessa in 2017, helping showcase the extraordinary potential of Ethiopia’s Gedeb region. At the station, carefully sorted cherries are depulped, dry-fermented for 48 to 72 hours, washed, then slowly dried on raised African beds. The result is an exceptionally clean expression of Ethiopian Landrace, grown at elevations reaching 2,000 meters. The Bottom Line: Crisp Asian pear leads into warm honey sweetness before giving way to a floral, lightly effervescent Moscato finish. Delicate, clean, and wonderfully expressive, this is everything we love about a great washed Ethiopian coffee. Recommended Brew: Pour Over or Drip
