Ding Jia Zhai is a small village in the Yiwu highlands, remote enough that its ancient trees grow tangled through standing forest rather than in managed rows. This cake was pressed there in 2009 and has been aged carefully in dry storage for more than fifteen years since.The bite of young sheng is long gone. What is left is depth, a calm sweetness, and the cooling settled energy that only properly aged material carries. The liquor pours a deep amber and holds its character over many infusions.400g
