About this product About the Merchant Save 10% when you purchase these as a kit. Our final 2026 shipment of Iio Jozo Akasu has arrived from Japan. Once this allocation sells out, the next opportunity won't be until next year. Omiyage, beautifully packaged souvenirs brought back from one's travels, are an important part of gift-giving culture in Japan. Our Iio Jozo Vinegar Omiyage – Premium Trio brings together three extraordinary expressions of Iio Jozo's vinegar-making craft in a beautifully presented gift box. This collection includes a 360ml bottle each of Iio Jozo's Pure Rice Vinegar, Pure Premium Rice Vinegar, and Akasu Red Vinegar Premium. Each tells a different part of the Iio Jozo story. Their signature Pure Rice Vinegar is rich, balanced, and packed with umami. Pure Premium takes their craft even further, using an extraordinary amount of rice to create a remarkably mellow vinegar with exceptional depth and refinement. Their rare Akasu is made from sake lees aged for at least 10 years, producing a rich, complex red vinegar traditionally prized for Edomae-style sushi. Perhaps the best way to experience all three is with Iio-san's own Edomae-Style Sushi Rice recipe, which combines Pure Rice Vinegar, Pure Premium Rice Vinegar, and Akasu to create beautifully seasoned sushi rice with remarkable depth and balance.
