Plenty of knuckle clearance, and plenty of blade to go with it. At 55mm from edge to spine your hand sits high above the board, so you stay comfortable right through a big prep session. At 200mm there's enough knife to break down a cabbage, portion a chicken, or work through a pile of onions on the one blade. The flat Bunka edge suits a push and pull motion, meeting the board along its full length so every cut comes away clean. The angled tip takes care of the close work. Hammered by hand, one dimple at a time, so food releases cleanly off the steel and every blade carries its own character.
