The Last Drop Distillers is an independent curator of ultra-rare spirits, founded in 2008 by industry icons Tom Jago and James Espey to unearth forgotten, world-class casks from the back of the world’s most storied warehouses. The Last Drop's first Irish whiskey release was created in collaboration with Louise McGuane, founder of J.J. Corry Irish Whiskey, and Helen Mulholland, one of Ireland's most respected whiskey blenders. The project began with a selection of rare Irish whiskeys from McGuane's library, from which vintage 1991 single malts were chosen, married and finished in an ex-Oloroso sherry butt.
