Nestled in the highlands of Manzanares, El Plato is a fourth-generation family farm perched at 2,000 metres above sea level. The 1.5-hectare plot is home to 5,000 coffee trees alongside bananas, fruit trees, and yuca. Producer Hernando Leiton made a deliberate shift away from traditional coffee varieties, replanting with Java and Gesha to pursue the quality and complexity that defines speciality coffee. At harvest, Hernando's team of permanent and seasonal pickers hand-select each cherry before undergoing a washed process, resulting in the clean, nuanced cup the farm's terroir makes possible.
