French Cuisine – In the footsteps of Auguste Escoffier
France – the land of kings, revolutions, and Joan of Arc. When it comes to French cuisine, there's so much to say. It's refined, elegant, and full of style. Learn how to prepare: Oeuf poché meurette – Poached eggs in red wine Savory soufflé with Comté and Camembert cheese, served with crème fraîche and spring onions Coq au Vin (Burgundy-style chicken) with Pommes Anna Brioche bread Instructor: Chef Nikolay Nemigenchev Chef Nikolay Nemigenchev – a lawyer by education, a chef by calling. Every Saturday and Sunday, he is the culinary host of BTV’s morning show. His passion for cooking began in early childhood. Today, he leads cooking courses for amateur chefs, works on projects related to tasting dinners across Bulgaria and beyond, and owns a business that promotes the idea of street food with a twist-proving that “street” doesn’t have to mean “junk,” and can, in fact, be fine dining. He is a member of the management board of the Association for Accessible and Quality Food, which acts as a mediator between governmental institutions, businesses, and end consumers. The association is the only one in Bulgaria that is part of SAFE Food Advocacy Europe – a highly trusted body within the European Commission on matters concerning food quality. Chef Nemigenchev also holds a degree in food safety engineering from the University of Food Technologies (UFT) and is a strong advocate for the "farm-to-table" concept, which he believes is key to putting Bulgaria on the global culinary map.
