Souvignier Gris is a pioneering disease-resistant grape variety, born from a natural cross between a classic European Vitis Vinifera — prized for its winemaking qualities — and the hardy American Vitis Rupestris, which offers natural resistance to powdery and downy mildew. The result is a vine that requires up to 15 times fewer treatments than conventional organic farming, dramatically reducing energy use, water consumption, and labour. It means a significantly lower carbon footprint — and a wine grown with a genuine commitment to the land. The Souvignier Gris grapes are harvested at full ripeness and placed in vats without destemming or crushing. Skin maceration lasts 11 days, allowing the anthocyanins and unique aromas to be extracted. The wine is then carefully pressed and transferred to vats, where it is aged for 5 months before being bottled. Pairing Suggestions: Chicken masala, pad Thai or spicy tacos. Tasting Note: Its delicate nose reveals aromas of jasmine blossom, white tea, and white peach. On the palate, it offers a full texture and unveils notes of citrus and spice.
