Crafted from Ma Kombu harvested in Hakodate, Hokkaido, these early-harvest blades are pulled at less than half their typical growing cycle, when the kelp is exceptionally tender. The kombu is gently boiled, thinly sliced, and dried into delicate sheets. When rehydrated, it expands up to 20 times in volume, separating into supple strands that deliver clean, understated umami. Rehydrate and fold into pasta or composed salads for subtle marine depth and texture. Cut into small pieces and fry briefly for a crisp, edible garnish.
