Flor del Desierto Sotol Carnei

Sotol is similar to Mezcal, but made with a different cactus. Growing mostly wild and taking 18-22 years to mature, the plants that go into Flor del Desierto's Sotol are entirely hand processed with axes and knives, as opposed to huge grinding wheels or industrial smashinery. Leads with a bright green, grassy, and herbal nose, and features a bright fruitiness and subtle smokiness. This expression is a pechuga-style, and has been smoked with venison, cranberries, and spices.
