The grapes ferment spontaneously with native yeasts in stainless steel before being bottled unfiltered with lees from the same vintage for a natural secondary fermentation. Farmed organically with biodynamic principles, the clay and moraine soils lend freshness and mineral character to this lively, textured wine.
