Pie San Typica Limited Release - Costa Rica
About Pie San Typica Brothers Luis and Oscar Monge tend to the land of Pie San; it’s their ‘project farm’ and a very important part of the growth of their mill, La Lia. They use this land to experiment and plant many unique varieties. This limited lot is 100% typica variety, one that’s low yielding (less fruit per plant) and highly susceptible to disease. So, growing this variety can be quite the feat, but, when done well, it can produce absolutely lovely coffees. (And, you guessed it, the Monge brothers grow it really well!) This lot of Pie San is processed with the red honey method, one that sits just past the halfway mark between a washed coffee and natural-processed coffee with over 50% of the mucilage left on the seed (aka bean) while drying. (Quick refresher: washed coffees have 0% of the mucilage left on and natural processed coffees have 100% of the mucilage/cherry left on.) The red honey processing accentuates the fruit-forward characteristics inherent in the coffee, making the tropical fruit and pineapple notes really sing. The lovely floral backdrop of bergamot rounds out the flavor of this limited release lot. Costa Rican coffees are some of our favorites; we love the approachable complexities and variety of honey processing methods they’ve mastered. We’ve been so fortunate to work with producers like Luis and Oscar year after year who continually bring us the best. Earlier this year, a few of us traveled to Costa Rica and got to taste this coffee with the producers. We really loved it, so, of course, we purchased this lot to share with all of you!
