Principato Di Lucedio Porcini Mushroom Risotto Mix 250g
A box of carnaroli rice pre-seasoned with porcini mushrooms, chives, parsley, onions and garlic. Have this stocked in your pantry for a quick and tasty dinner. One box provides 3-4 portions. This risotto mix is not precooked and has no added salt. To prepare: toast the contents in 2 tablespoons of extra virgin olive oil for a few seconds. Add around 1 litre of boiling vegetable stock, season with salt and cook for around 15 minutes, stirring occasionally. Remove from the heat, put the lid on and leave to stand for 2 minutes. Don't forget to add a knob of butter and grated parmesan cheese at the end. The carnaroli rice is sustainably grown in the north west of Italy in the Piedmont region. Due to carnaroli's large grain size and high percentage of amylose it is a rice that keeps firm during cooking, making it ideal for creamy risottos that stay al dente. The farm that produced this rice dates back to 1123 when Cistercian monks from Burgundy settled and built the Abbey of Lucedio. Then ruler, Renier I of Montferrat, provided marshland, heath and woodland to the monks for agricultural cultivation. They were the first to introduce growing rice in Italy, during the mid-1400s.
