Persimmon Leather is pure dehydrated persimmon, and nothing else. Whole fruit, thinly sliced and slowly dried until its honeyed sweetness is concentrated into a soft, delicate chew.It belongs on a cheese board and in a quiet moment alike: beautiful torn across a grazing platter, gorgeous against a sharp blue, and just as lovely eaten on its own. Every slice holds that subtle, honeyed persimmon flavour, locked in through slow dehydration, with a tender, chewy bite. One ingredient, no additives, and naturally gluten free and vegan.Our persimmons are grown in the orchard just down the road, in a pocket of the country known for some of the oldest persimmon groves in Australia, a place people travel to for this fruit alone. The season is short, and this leather is rarer still: we made it from the very last of the harvest, preserving the tail end of the season before it slipped away.A true seasonal luxury, in the smallest of batches. When it is gone, it is gone until the trees give again.
