During the harvest, the coffee is carefully handpicked and selected before being depulped in the afternoon. It then undergoes a prolonged fermentation of 50 to 70 hours. Once fully washed, the beans are laid out on raised African beds, where the cool mountain elevation dictates a slow, deliberate drying process lasting between 15 and 30 days.
