ORIGIN: Mexico REGION: Chiapas FARM: Salitral VARIETY: Bourbon, Catura and Mundo Novo ALTITUDE: 1,100 to 1,800 meters PROCESS METHOD: Fully washed and Sun Dried Small landholders pick and pulp their own coffees by hand in this region of Chiapas. They ferment in the backyard with a small tank and wash and dry the coffee wherever they can find space. On weekends they drive bags to the town of Nuevo Paraiso and deliver the coffee to a warehouse where it is classified and blended by cup quality. Purchasing Fair Trade coffee supports the efforts of coffee farmers by empowering them to fight poverty, improve lives, and protect the environment. Cupper Notes: Nut, Butter, Herbal
