After four years as a decaf exclusive, we’re excited to finally introduce Villamaría in its full, caffeinated glory. In this special double pack, we’re proud to showcase both the caffeinated and decaffeinated versions of this exceptional coffee. It’s a unique opportunity to experience how different processing methods can shape and transform flavour, side by side. --- The coffee Origin: Caldas, Colombia Producer: La Aurora Varietal: Variedad Colombia, Castillo Process: Natural / Sugarcane E.A. decaf Altitude: 1800 masl --- The producer Local farmers deliver and sell their coffee cherries to Villamaría, in Caldas, Colombia. This is an uncommon model in a country where most producers sell parchment to cooperatives or process it themselves. This approach prioritises stable prices and sustainable farmer income, expanding regional production while improving overall quality. Villamaria (200g) Freshly harvested cherries are delivered and sold to Villamaria’s buying point ‘La Aurora’, where they are floated, sorted, and rested in cherry for 24 hours. The next day, they are taken to ‘Jamaica’, the processing station, for 48 hours of additional fermentation in cherry. The coffee is then dried on raised beds in a temperature-controlled greenhouse for about 15 days before finishing in a mechanical dryer for 3–4 days. Careful control of humidity and temperature throughout ensures consistent, high-quality natural lots. Villamaría’s caffeinated debut bursts with vibrant flavour and a full body, revealing luscious notes of praline, black elderberry, and sable grape. Decaf Villamaria (200g) This particular lot is a naturally processed EA decaf, which means the decaffeination process is done by the utilisation of Ethyl acetate derived from naturally fermented sugarcane harvested in the local area; this method is not only better for the environment, but also preserves the flavour of the coffee, bringing a delightfully clean and full-flavour decaf to our offering. The coffee was dried for 15 days in a temperature controlled greenhouse, then in a mechanical dryer for consistency. A sweet and creamy decaf, with clean notes of crisp red apple, toffee, and chocolate in the finish.
