VINIFICATION Following manual harvesting, the grapes are cooled to 5 ºC before destemming. The vinification of the three grape varieties — Arinto, Fernão Pires and Verdelho — is carried out separately. Fernão Pires grapes undergo pre-fermentative skin maceration, while the Arinto grapes benefit from extended pre-fermentative maceration with lees. After clarification through decantation, alcoholic fermentation takes place. AGEING 20% of the blend, consisting of part of the Arinto and Fernão Pires varieties, fermented in second- and third-year 500 L French oak barrels.
