Region: Kintamani Highlands of Central Bali, Indonesia Varietal: Bourbon, Typica, and Catimor Altitude: 1200-1600m Processing: Full natural and dried on raised beds Roast: Light Notes: Syrupy body, Tangy acidity, Chocolate, Banana, Cherry Family owned farms located in the Kintamani highlands of Bali grew this coffee; in the volcanic soils of Mount Agung intercropped with citrus trees. The production is bolstered by an ecologically sustainable irrigation system (over 1000 years old) developed by Hindu priests as a focus on the practice of philosophical harmony (known as Tri Hita Karana) formed between environment, humans, and God. Unique to this region (due to high humidity), naturally processed coffee is dried on raised beds in open air. A water scarcity measure that yielded exceptional results.
