Roasted 5/28 Tasting notes: Violet - Orange - Strawberry Producer Altieri Coffee Variety Geisha Process ASD – Anaerobic Slow Dry Roasting Filtered Score 89 This exceptional micro-lot comes from Chombi, one of the most famous, highest and most prestigious plots of the Altieri Coffee farm, nestled at 1800 meters altitude in the heart of the volcanic terroir of Boquete. For this batch, the coffee was enhanced by a process called Natural Anaerobic Slow Dry [ASD]: a meticulously prolonged anaerobic fermentation, followed by ultra-slow drying of the whole cherries. This technique magnifies the natural sugars of the bean to offer a cup of spectacular richness and clarity. In the cup, the captivating scent of violet harmonizes with juicy notes of orange and the sweet, indulgent taste of strawberry.
