Alaka
Roasted for: Filter Tasting Notes: Mixed Berries, Purple Grapes, Cocoa Country: Ethiopia Region: Guji, Dimtu Variety: Ethiopian Landrace Process: Natural Elevation: 1800-2200 masl About the Producer Alaka is produced by Gizaw Alemayehu, whose family history in coffee stretches back generations. His father owned large coffee farms around Yirgacheffe before Ethiopia's land nationalisation reforms in the 1970s. Rather than pursuing farm ownership himself, Gizaw focused on coffee processing, carrying forward his family's passion through a different path. Today, together with his wife Frehiwot, he continues that vision by producing high quality coffees that celebrate both heritage and craftsmanship. About the Lot Ripe cherries are delivered to the wet mill, where they are floated to remove defects, graded and then transferred to African raised beds for drying. The coffee is shaded during the hottest hours of the day and turned frequently to ensure even drying. This careful process typically takes 20-30 days, allowing the cherries to slowly develop sweetness and complexity before reaching their target moisture content. The result is a beautifully balanced natural coffee bursting with mixed berry sweetness, juicy purple grape character and a smooth cocoa finish. It is expressive without being overwhelming, offering the kind of balance and drinkability that makes Ethiopian naturals so enduringly popular.
