Dalrymple Single Site Pipers River Chardonnay This premium Australian Chardonnay comes from 25-year-old estate vines grown in the cool maritime climate of Pipers River, Tasmania. Protected by local hills, these east-facing blocks feature deep, well-draining basalt soils that allow deep root penetration. Winemaker Peter Caldwell manages hand-picked fruit through whole-bunch pressing. It is then fermented in French oak puncheons and ceramic eggs. Regular stirring and malolactic fermentation create a highly expressive profile with focused structure. Initial aromas of warm spice, smooth lemon curd and grapefruit open up to stone fruits and creamy peach yoghurt. The structured palate delivers a core of juicy pear flavours balanced by fine, brilliant acidity and a crushed oyster shell minerality. A clean seam of citrus runs through to a remarkably long, salivating finish. This expressive white wine matches wonderfully with a dish of chicken piccata accompanied by rocket and a sharp lemon vinaigrette.
