Founded in 2014 by local couple Claire and Martin Murray, the distillery is set on the spectacular northern Scottish coastline and boasts white sand beaches, rolling dunes and magnificent wildlife. Dunnet Bay Distillers uses 2 bespoke copper pot stills - Elizabeth and Margaret - and unique botanicals to create exceptional spirits which are handcrafted using a 500-litre small-batch method, ensuring each bottle is hand-filled, sealed, batch-numbered, and signed, reflecting their commitment to quality and authenticity. Holy Grass Vodka is a celebration of local ingredients, it is infused with the vapour of Scottish Highland apple juice from Black Isle Berries near Inverness which complements. The freshness of the apple complements the sweeter, vanilla notes of Holy Grass. Holy Grass (Anthoxanthum nitens) is a delicate, sweet-scented grass known by several common names such as Holy Grass, Bison Grass or Sweet Grass. This hero ingredient was found at the nearby Thurso River by the legendary botanist, Robert Dick. It has been used on church floors to give a sweet, vanilla smell when walked over, hence its religious name. Nose: sweet creamy vanilla notes appear on the nose. Palate: a delicious apple sweetness with hints of honeyed chamomile. Finish: light spice rounded off with lasting creamy vanilla notes.
