Scar of the Sea 2025 Methode Ancestrale Rosé of Pinot Noir

Tech Variety: 100% Pinot Noir Location: SLO Coast Alcohol: 11.5% Tasting Notes Aromas of wild strawberry, coastal sea spray, and red currant on the nose. A light and crisp palate of fresh berries, ripe citrus, and herbs with a soft, persistent mousse and a distinct saline, mineral edge. Winemaking Grapes were picked for natural acidity and foot tread before being whole cluster pressed. The juice was fermented with native yeast in neutral french oak barrels. The wine was bottled at the very end of fermentation to capture the natural bubbles of fermentation in the bottle. The wine aged in bottle on lees for 3 months before being riddled, disgorged, corked and caged, all by hand. Vineyard The Topotero Vineyard is located one mile from the Pacific Ocean in Avila Beach. The Topotero Vineyard received its Demeter biodynamic certification for farming in 2024.
