Description/Taste: Taleggio is a traditional Italian washed-rind cheese made from cow’s milk, renowned for its soft, creamy texture and rich, buttery flavour. Originating from the Lombardy region of northern Italy, it is easily recognised by its distinctive pink-orange rind and pale, supple interior. Despite its strong aroma, Taleggio has a surprisingly mild and delicate taste, with subtle tangy notes and earthy undertones. As it matures, the cheese becomes softer and develops a more complex flavour profile. Uses & Flavour Pairings: Taleggio melts beautifully, making it an excellent choice for risottos, pasta dishes, pizzas, tarts, toasted sandwiches, and gourmet burgers. Its creamy texture and savoury flavour pair exceptionally well with pears, figs, walnuts, mushrooms, truffles, honey, and cured meats such as prosciutto and salami.
