Our Chilli Gouda is a traditional Dutch-style cheese, handcrafted in the Indian Himalayas using milk from cows and buffaloes grazing in pristine mountain pastures. Naturally ripened and free from chemicals or artificial coloring, this semi-hard cheese combines Gouda’s signature creamy nuttiness with a lively infusion of chilli, delivering a gentle heat that enhances rather than overpowers. Produced under fair trade principles, it embodies purity, craftsmanship, and bold culinary expression. Available in five aged versions, each stage reveals a unique character, from smooth and mildly spiced to rich, complex, and warmly intense. Young Chilli Gouda (3–8 Weeks) → In its young stage, Chilli Gouda is soft, creamy, and slightly elastic, with a mild buttery sweetness typical of Gouda. The chilli adds a delicate warmth that tingles on the palate without being overpowering, creating a balanced flavor that is both comforting and subtly exciting — perfect for melting, snacking, or adding a gentle kick to everyday dishes. Mild Chilli Gouda (3–4 Months) → As it matures into the mild stage, the cheese develops a firmer body and gentle nutty undertones. The chilli becomes more integrated, offering a fuller, rounded warmth that enhances Gouda’s natural tang without overwhelming it.
