Colombia Rio Negro
Colombia Rio Negro Varietal: Bourbon Aji Process: Lemongrass Co-Ferment Weight: 200g This lot comes from Rio Negro, a municipality in the eastern part of Antioquia, Colombia, in a region known as the Oriente Antioqueño. The area sits within Antioquia's broader co!ee belt, where volcanic soils, consistent rainfall, and the altitude range of 1,700–1,900 meters create cool, slow-ripening conditions well suited to developing complex flavor in the cherries. Rio Negro has historically been more associated with flowers and agriculture broadly, but as Colombia's specialty coffee scene has grown, producers in the area have increasingly turned to micro-lots and experimental processing - like the lemongrass co-ferment used here - to set their coffees apart. The result is a cup with citrusy and herbal notes layered over the coffee's natural sweetness.
