After destemming and a brief cold skin maceration, the fruit is gently pressed. Following temperature-controlled fermentation in stainless steel vats, the wine matures on its fine lees for six months, acquiring textural depth and subtle complexity prior to clarification and bottling. Tasting Notes Glinting an intense lemon yellow with greenish highlights, this wine opens with a highly complex bouquet of orange blossom, jasmine, lychee, and Williams pear, interwoven with lemongrass, subtle lemon cream, fresh thyme, and bay leaf.
